Some have done that...cut open a “door” on the cat, gut it, and weld the the “door” back. You'll probably need an air chisel to get the cat material out...I seem to recall it’s pretty tough. However, if doing this, I’d cover the bike well...welding, sparks, etc. In an abundance of caution, I’d probably take the cat off.

Cutting the catalytic converter open is quite invasive with a cutting wheel.
Then hammering and scratching the content out.
Then welding the catalytic box close ...

I would not want sparks flying around and heat in proximity to plastic, leather and chrome!

Trying to drill the catalytic out with a wholesaw on a longer rod is quite a mess and will not lead to complete removal of the metallic comb which is quite tough!
